Pasta with Bacon and peas

Another Reciepe from Gordon Ramsay... Taken from his book...

Pasta with Bacon and Peas

Serves 4 - 6
200g Dried Fusilli Pasta
Sea salt and Pepper
3tbsp Olive oil
1 onion, finely chopped
1 garlic clove, finely chopped
100g bacon Lardons
300ml Double Cream
100g Frozen Peas
1 - 2 tbsp Chopped flat-leaf Parsley
1 - 2 tbsp freshly grated Parmesan

Cook the pasta in a large pan of boiling salted water with 1 tbsp olive oil for 7 - 10 mins until al dente (cooked but firm to the bite). Drain and rinse under cold water to remove excess starch. Return to the pan and set aside.
Heat the remaining olive oil in a deep saute pan. Add the onion and garlic and fry, stirring, for2 - 3 mins, then add the bacon and fry until crisp. Add the cream and let bubble until reduce by half.
Add the peas, bring back to a simmer and cook for 2 mins. Season with salt and pepper to taste. Add the pasta to the sauce and heat through, stirring, for 1-2 mins. Scatter with parsley and Parmesan, and serve in warm pasta bowl.

Another simple and yet delicious dish by Gordon Ramsay.... Happy cooking..
